Less than a week until Thanksgiving and I have a confession for all of you. I was terrified to make my own pie crust… like avoided it at all costs but when I made my “test” pie I made my own crust and it was way easy!
I use the recipe from Ina for perfect pie crust, note I do not own a food processor so I just use a pastry blending tool.
So use that one if you are a newbie and don’t be scared it isn’t that bad and if you mess up you can always go to the store and get some or maybe just add it to your list just in case.
So as far as pies  I am making a pecan and a berry pie this year… what kind of berry I have no idea.. I guess I need to figure that out… but for the pecan I use another Ina Recipe. I use her recipe for a Maple Pecan Pie but I do not add the orange zest, I did in my test pie but I feel it overtakes a lot of the flavors.
So the other pie I do is a walnut pumpkin pie it is from a magazine that is probably like 15 or so years old since my Grandma has been making it as long as I can remember.  I love this pie for multiple reasons 1 being that I love graham cracker crusts and 2 I love the nuts on top!

Applesauce Cookies with Carmel Frosting

I can’t believe it is already Wednesday! The holiday on Monday has seemed to make this week disappear and I love it. I have been pretty productive so far too, which is always a good thing. The pillowcases I was working on are almost done I just need to figure out how to sew with a zipper on some super soft fabric so I should have them done by the end of the day and I started cutting the squares for a quilt for my brother! I tell you sometimes I am really productive!

Now I have some super awesome cake like cookies to share with you, they were super good.

Applesauce Cookies with Carmel Frosting

Cookie Ingredients:
1 cup sugar
½ cup butter
1 egg
1 cup applesauce
2 cups flour
1tsp baking soda
1 tsp baking powder
½ tsp cinnamon
¼ tsp cloves

Frosting Ingredients:
3 Tbs Butter
¼ cup heavy cream
½ cup brown sugar
1 tsp vanilla
1 cup powdered sugar

For the Cookies:
1. Preheat oven to 375
2. Mix the sugar, egg, and butter in a large mixing bowl.
3. Once mixture is combined mix in the apple sauce until incorporated
4. In a separate bowl mix together the dry ingredients
5. Incorporate the dry into the wet
6. Scoop onto a greased cookie sheet. No need to pat down just scoop and drop
7. Bake for 8-10 minutes (Makes about 3 dozen)

Frosting:
1. Mix together the butter, brown sugar & vanilla. Once mixed slowly add in the heavy cream and mix well then by the ¼ cup add in the powdered sugar until you find it to be sweet enough. I used ¾ cup powdered sugar since I do not like super sweet frosting.

The cookies end up super cakey and are pretty good even without the frosting but the frosting definitely puts them over the top. Oh and your house is going to smell fabulous! So go get your bake on! :]
